Pao/Pav

Americans love their Sourdough bread, French devour the Baguette...ask a Mumbaikar what they prefer and they'll point you to the staple bread of Mumbaikars - the Ladi Pav!

Here is a step-by-step recipe of how to make these soft, light, and fluffy Pav or dinner rolls at home....This recipe was shared by our dear friends - Krystle & Lawrence! (Thank you guys!!)

 

Prep Time: 1 hour Cook Time: 30 minutes


Ingredients (yields 12-15 pavs)

4.5 cups all purpose flour/maida

1.5 tsp yeast

1 cup warm water

1 cup water (room temperature)

⅓ cup oil

2 tbsp salt

2.5 tbsp sugar

Butter/Oil for basting


How to make?

Step 1:

Mix warm water, ½ cup maida and yeast till the yeast starts to form bubbles.

Step 2:

Add the remaining ingredients to this mixture and knead the dough till it is soft and smooth.

Step 3:

Proofing Round 1: Cover the dough with a wet kitchen towel for approximately 45 minutes. The dough will double in size.

Step 4:

In the mean time, prep your baking pan with some oil and coat it with flour.

Step 5:

Flatten the dough ball and create 12-15 equal sized pieces. Mold each piece of tough into a tiny ball/roll and place it into your prepped pan. Apply butter or oil on top of the dough.

Step 6:

Proofing Round 2: Place this pan in the naturally warm oven for approximately 30-45 mins. The dough will double in size.

Step 7:

Remove the dough and preheat the oven at 350F (200C). Once preheated, bake the dough for approximately 20-30 minutes till the bread starts turning light brown in color.

Step 8:

Once the pavs have a nice shade of brown, place the baked pavs and baste it with more butter to create a beautiful glaze.
