Another type of Indian bread is the famous Puri. Puri is made with basic ingredients found in all Indian households - flour, salt, water, and oil. It can be eaten for breakfast, as a snack, or on festivals. In the Western region of India, puri is usually served with shrikhand or aamras. As we prep for Dussehra, here's the recipe for one of our favorite meals...
Prep Time: 2.5 hours Cook Time: 15 minutes
Ingredients (yields 10-12 puris)
1 cup whole wheat flour
2 tbsp hot oil
2 tbsp rava/semolina
1/4 cup water
2 tsp Salt
2 tsp Sugar
Oil to deep-fry
How to make?
Step 1:
Add wheat flour, rava, salt, and sugar to a mixing bowl. Add 2 tbsp of hot oil and mix well.
Step 2:
Add about 1/4 cup water to the bowl and knead the flour to form a stiff dough. Add more water as needed. Grease your palms with a little oil and knead lightly to smoothen the dough. Ensure that the dough isn't too soft.
Step 3:
Cover the bowl and let the dough rest for approximately 2 hours.
Step 4:
Divide the dough into 10-12 quarter-sized balls.
Step 5:
Sprinkle some flour on your rolling area. Next, take a dough ball, gently roll and flatten the dough between your palms and place it on the rolling area.
Step 6:
Using a rolling pin, roll the dough evenly till it is about 2-3 inches wide. Roll out all your dough balls. Do not roll the dough too thick or too thin - it should be even on all sides. Keep aside.
Step 7:
Heat oil on medium - high flame in a deep pan. Check if the oil is hot by dropping a small piece of dough. If the oil is hot and ready, the dough will rise immediately.
Step 8:
Gently slide the puri into the hot oil. Using a steel straining, toss hot oil from the side of the pan on top of the puri till it puffs up. Flip the puri and fry the other side until its crisp and golden. Fry all the puris in the same manner.
Serve hot with shrikand or your favorite sabji!
