Sheera/Halwa

Goda sheera or suji halwa is a traditional Indian dessert made with semolina, ghee, sugar, and dry fruits. In a Maharashtrian household, goda sheera is served during breakfast or as a prasad (offering during festivals)...in the Northern parts of India, halwa is serve with puri. I have yet to meet one person, who dislikes this dish...its fluffy and soft and oozes with delicate flavors of cardamom and ghee. Its quick and its absolutely delicious...check out the recipe below!

Ingredients (serves 2):
1 cup rava (suji or semolina)
1 cup sugar
1 1/2 cup water*
1/2 cup milk*
1/2 cup ghee
5-6 cloves
Pinch of salt
*If you prefer soft, gooey sheera - you can use 2 cups milk instead of water & milk.
How to make?
Step 1:
Heat ghee in a wok on low-medium flame. When the ghee melts, add cloves ( and cashews and raisins, if you like dry fruits) and fry until light golden.
Step 2:
Add rava to the pan and roast continuously till the rava turns gold in color. Be careful not to overburn the rava...a few seconds of not stirring can cause the rava to burn.
Step 3:
In the meanwhile, boil water and milk in a pan. As soon as the rava is well-roasted, carefully pour the hot water the hot rava pan, stirring continuously until the water is absorbed completely. (Pro tip: Rava absorbs water and turns thick)
Step 4:
Lower the flame and cover the pan, letting it cook on steam for 1-2 minutes. Next, add sugar to the rava mixture and mix well.
Garnish with saffron strands or dry fruits and serve warm!
