Homemade yogurt or curd (dahi) is a staple food in many Indian households. There are several advantages to making your own pot of yogurt - it is both sustainable, inexpensive, and is organic.
Here is the recipe for how a typical desi family makes yogurt at home...
Ingredients
2 tbsp of yogurt starter
2 cups of milk
To obtain some starter yogurt, feel free to borrow from your Indian friend/neighbor, use your store-bought favorite yogurt, or use a little from the last time you made curd.
How to make?
Step 1:
Wash and clean your pot well. Pour milk in the pot and turn the heat to medium-high.
Step 2:
Bring the milk to a boil. It takes approximately 7-8 minutes. Once the milk boils and rises, lower the heat and let the milk simmer for 2-3 minutes. Turn off the stove. Let it cool down slightly.
Step 3:
Pour the milk into a container. It is recommended to use the same bowl for yogurt each time.
Step 4:
Let the milk cool till it becomes lukewarm. Do not hasten the cooling process.
Step 5:
Add the starter yogurt (should be at room temperature) to the lukewarm milk. Mix well using a spoon.
Step 6:
Cover the container with a lid and keep the yogurt in a warm place till the yogurt solidifies. This process can take up to 8-10 hours.
Step 7:
Refrigerate the yogurt once the yogurt is set.
