Tandalachi Bhakri (Rice Flour Bread)

Bhakri can be made using Sorghum (jowar), Pearl Millet (bajra), Finger Millet (ragi) or Rice flour (Tandool)...its soft, its warm, its simple, and its absolutely delicious especially when paired with hot and spicy Pithla. Prep Time: 30 minutes Cook Time: 10 minutes
Ingredients (yields 5):
1 cup rice flour
1/2 cup + 2 tbsp water
Salt as per taste
Ghee as per taste
How to make?
Step 1:
Boil water in a cooking pot. Add salt and mix well.
Step 2:
Reduce the heat to l
ow-medium flame, add rice flour, and mix well. After 2 minutes, turn off the flame, cover the pot, and let the rice flour soak in the steam for 4-5 minutes.
Step 3:
Transfer the rice flour to a kneading bowl. Grease your palm with oil and knead the rice flour into a soft, dough ball. Let it rest for an hour.
Step 4:
When ready, make lemon sized balls using the dough.
Step 5:
Heat a griddle or pan on medium flame. Meanwhile, pat and flatten the dough balls with your palm, occasionally sprinkling water to avoid the dough sticking to your hand.
Step 6:
Sprinkle some water on the hot pan and place the flattened dough on it. Allow the underside to cook for 1 minute and then flip using a pair of tongs.
Step 7:
Apply some ghee to the cooked side. When both sides are cooked, place the bhakri directly on the flame or cooking top till it fluffs up.
