Sabudana Khichdi



Sabudana Khichdi loosely translates to "pearls of deliciousness". This popular Indian dish is made using tapioca pearls (aka sabudana), potatoes, peanuts, garnished with cilantro. Sabudana is rich in carbohydrates and provides an instant source of energy one needs to kick-start their day, which is a reason why this dish is often made for breakfast and 'fasting' periods in many Maharashtrian and Gujarati households. Learn how to make one of our favorite breakfast meals often known as "Tapioca Pilaf" in the western countries (*insert rolling my eyes emoji*)

 

Prep Time: 6-8 hours Cook Time: 35 minutes

Ingredients (serves 4-5)

1 cup tapioca pearls

1/3 cup roasted & crushed skinless peanuts

2 tbsp sugar

5-6 chillies (chopped)

1 tbsp cumin seeds

3 tbsp ghee (or unsalted butter)

2 tbsp yogurt

1 medium size potato (chopped)


How to make?

Sabudana Prep:

Step 1:

Soak the tapioca pearls in 1.5 cups water (just enough to cover all of them) for approximately 6 hours.

Step 2:

To check if the pearls are ready to be cooked, presse a few pearls between your thumb and forefinger. If the pearls are properly soaked, they will be double in size, soft, and easily mashable. Drain all the excess water when you're ready to cook.

Step 3:

Roast peanuts for 5-6 minutes and crush them into fine powder.

*Pro tip: Dry roast peanuts in a flat plate in the microwave for 6-8 minutes, flipping them occasionally to roast all sides.

Khichdi:

Step 1:

Heat ghee in a pan. Add cumin seeds, followed by finely chopped chillies. Saute for 2-3 minutes.

Step 2:

Once the cumin seeds and green chillies begin to splutter, add chopped potatoes and shallow fry them till they are brown in color and well-cooked. Saute for 5-6 minutes. Sprinkle some salt.

Step 3:

+ Add crushed peanuts, sugar, salt, and yogurt to the prepped sabudana.

Step 4:

Lower the flame and add the sabudana mix to the pan. Mix everything well and saute for about 3-4 minutes on medium-high flame, ensuring that the pearls do not stick to the pan. Sabudana will start to become transparent.

Step 5:

When the tapioca pearls are transparent, lower the flame, cover the pan, and let it cook for an additional 2-3 minutes.


Garnish with chopped cilantro or grated coconut and serve hot!
