If you love banana chips or maduros in a Cuban restaurant, you're bound to love the kelyachya kaptya or fried-raw bananas. These are a staple in our family, especially as an accompaniment when meals is a simple dal-rice.
Prep Time: 30-45 minutes Cook Time: 10 minutes
Ingredients (servings 2):
2 raw bananas
2 tsp red pepper
½ tsp turmeric
¼ cup rice flour (all-purpose flour is a good alternate but not the same!)
2 tbsp of oil
Salt
How to make?
Step 1:
Peel off the outer skin of the raw banana.
Step 2:
Half the banana horizontally, then vertically slice them thin (2-3 mm thickness).
Step 3:
Soak the slices in salt water for about 30-45 mins to get rid of the stickiness on the bananas.
Step 4:
After they’re well soaked, rinse out the water and any excess salt.
Step 5:
Rub the raw banana with paprika and turmeric.
Step 6:
Lightly coat the slices in rice flour.
Step 7:
Heat the oil in a pan, and shallow-fry the banana slices on a slow flame till they turn gold/brown on either side and are cooked.
