Tandoori Chicken

Tandoori chicken is a quintessential Indian delicacy made by marinating chicken in yogurt and spices. It is traditionally cooked in a clay oven. This delicious dish can make for a great party appetizer! Learn how to impress your guests with this quick, easy recipe.


 

Prep Time: 8-10 hours Cook Time: 45 minutes


Ingredients

4 chicken thighs (with bones or boneless)

1/3 cup of heavy cream

2 tbsp of yogurt

1 tbsp garam masala

Upto 1 tbsp red chili powder (as per taste)

1 tsp turmeric

1 tbsp ginger paste

1 tbsp garlic paste

2 tbsp besan/gram flour/chickpea flour

2 tbsp milk

3-4 strands of saffron

Butter/ghee/oil/fat of your choice for basting

Salt to taste


How to make?

Step 1:

Wash and clean the chicken.

Step 2:

Mix together heavy cream, yogurt, garam masala, red chili powder, turmeric, ginger paste, garlic paste, and besan. Marinate the chicken with this mixture and refrigerate (for at least an hour, overnight marination is encouraged).

Step 3:

Remove the chicken from the fridge an hour before you're ready to cook.

Optional step 4:

Soak saffron in warm milk. Mix in the saffron soaked milk with chicken. Saffron adds flavor and color to the chicken.

Step 5:

Coat the marinated chicken with besan. Besan allows the chicken to soak in all the masala.

Step 6:

Heat the grill or preheat the oven to 350F/180C. Baste chicken with your choice of fat and place it on the grill/oven. Flip the chicken every 40 minutes to ensure the entire piece of chicken is well cooked. If you are using an oven, broil the chicken for the last 15-20 minutes before serving.


Serve hot with a slice of lemon and sliced lemons!


Pro tip: Use a silicone mat if you're cooking in the oven!
